Mexican Chicken Casserole

Mexican Chicken Casserole

INGREDIENTS
One big Chicken or Two Medium Chickens (dead)
2 Cans Campbells Golden Mushroom Soup
Thick and Chunky Salsa (its more flavorful than the thin stuff...)
1 small can diced olives (unless you like them sliced...)
1 medium can of Mushroom Pieces and Stems
1 big Red Onion
About 1 pound of 2 Cheeses, preferably Medium Cheddar and Jack
1 bag Doritos Nacho Cheese Flavored tortilla chips (you need the flavor)

PREPERATION
Boil the chicken and bone it completely, making pieces bite size
Dice and saute the red onion
Grate the Cheeses
Mix
Two cans of soup
The same amount of thick and chunky salsa
Olives
Mushrooms
The sauted onion
Layer Two or Three Times, depending your inclination
Doritos
Chicken
Sauce
Cheese
Bake the whole thing in a 350 degree oven for about 30 minutes or until the sauce is boiling at the sides of the pan.
Server with Mexican Rice and a variety of salsas and dressings.

Lay down your sombreros and eat up

this was yummy

I tried this, it could have been a bit spicer- but very very good and very easy!!! I will definately make it again. It makes a big 9x11 pan, so it feeds us for at least 2-3 meals. With even leftovers to freeze.!
