Cabbage roll casserole

Please note this is a take off of a recipe from a microwave cookbook that was given to me 10 years ago. I had to revise it to an oven version, then I had an abundance of cabbage, and my oven burner burned had to figure out how to make cabbage rolls in the crockpot, my family loves cabbage rolls.
Here is the easy.

1 lb ground beef
2 (15 oz) cans tomato sauce
1/2 cup cooked rice
4 tablespoons brown sugar
2 tablespoons cider vinegar
Several leaves of cabbage shredded

Brown the ground beef, cook rice. Throw all in the crockpot and mix well. Cook on low for 8 hours or high for 4 hours.

I usually put the ground beef in first, then the rice, half the sauce then add as much shredded cabbage as desired, then add the rest of the sauce.

The ground beef I use is repackaged from bulk bought so it is probably less than a pound, and I usually make 1 cup of rice to make up for the loss of ground beef, and it is a little more filling, and costs less!!!

The casserole tastes like cabbage rolls, without the hassle of precooking the cabbage, (the cabbage is so soft) trying to fill the leaves and keeping them together.

2 pounds Ground Beef
1 large Onion, chopped
1- 28 oz can Tomato Sauce
3 to 4 pounds Cabbage, chopped
1 Cup Uncooked Rice
teaspoon Salt
2 - 14 oz cans Beef broth

Preheat oven to 350 F. In a large skillet,
brown beef over medium high heat until
done. Drain off fat.In a large mixing
bowl combine the onion, tomato sauce,
cabbage, rice and salt. Add the cooked
meat and mix well. Put cabbage meat
mixture into a 9 x 13" casserole dish.
Carefully pour broth over meat mixture.
Bake, covered, for 1 hour. Stir, replace
cover and bake for another 30 minutes.

I dislike cabbage (cooked)
But my husband loves it.
Each St. Patricks day he cooks his corn beef and cabbage soup.
I am good about gagging it down.
You would think that me being Irish that I would like it.
These recipes you share look delicious.
I will share them with hubby.
He will be delighted.
He is the cook in this family.

I don't care for cabbage either....any way except raw.....plain raw...not cole slaw....just plain, washed cabbage.

However, I do like (not love) the recipe for the cabbage roll casserole that I posted.

I love this recipe as does my hubby!!

1 1/2 pound ground beef
2 med onion chopped
1 clove garlic minced
1 tsp salt
1/4 tsp pepper
1 14 oz tomatoe sauce
1 can water
1/2 cup rice uncooked
4 cups cabbage shredded
sour cream

Brown beef, onion, garlic. add salt, pepper,tomatoe sauce and water.Add rice to beef and simmer 20 minutes. Put 1/2 of cabbage in baking dish. Put 1/2 rice mixture over cabbage. Repeat layers. cover and bake in 350 oven for 1 hour. Serve with sour cream.

3 garlic cloves, minced
2 cans (15 oz each) tomato sauce divided
1 tsp dried thyme
1/2 tsp dill weed
1/2 tsp rubbed sage
1/4 tsp salt
1/4 tsp pepper
1/4 tsp cayenne pepper
2 C cooked rice
4 bacon strips, cooked and crumbled
1 med head cabbage (2 lbs) shredded
1 C (4 ozs) shredded mozzarella cheese

In large skillet, cook the beef, onion and garlic over med. heat until meat is no longer pink. Stir in 1 can tomato sauce and seasonings. Bring to a boil. Reduce heat, cover and simmer for 5 min. Stir in the rice and bacon, heat through. Remove from heat.
Layer a third of the cabbage in a greased 13 inx9inx2in pan. Top with half of meat mixture. Repeat layers, top with remaining cabbage. Pour remaining tomato sauce over top.
Cover and bake at 375* for 45 min. Uncover, sprinkle with cheese. Bake 10 min. longer or until cheese is melted. Let stand 5 min before serving.
