Broccoli Casserole

3/4 C mayo
4 oz cheddar cheese, shredded
1 pkg (10z) frozen chopped broccoli
1 can cream of broccoli soup
2 eggs, beaten
1 box croutons
1/2 C butter, melted

Mix mayo, soup, cheese and eggs together in a bowl. Add broccoli and mix well. Pour mix into a slightly greased (spritz with non-stick spray) 9 x 13 casserole.

Cover with aluminum foil and bake at 350* for ~ 25 minutes (until bubbly).

Mix croutons with butter and spread over broccoli. Bake 5 - 10 minutes (until croutons are browned).

Take 2 heads of broccoli and cut up or 1 bag frozen. Cook in microwave for 7 minutes(it should not be completely done it will cook in oven, you can omit this step if you like your broccoli very crunchy. While broccoli is cooking in microwave take onion and 1 bell pepper and dice, pan fry in butter until done . Add pepper and onions to broccoli when ready, then add 2 cups of grated cheese 1/2 cup of mayonaise( the mayo may vary you just want a mixture that is not too dry. place all in casserole dish and bake at 350 for 40 minutes. Enjoy!!!
