This is absolutely wonderful as is OR with a dollop of sour cream and some salsa over it. Droooool it's a good thing this is on the Thanksgiving menu or I'd have to make some soon

1 cup grated cheese
3/4 cup cornmeal
1/4 cup flour
2 teaspoons baking powder
Mix altogether and put in a greased casserole. Bake for 1 hour at 350 degrees.

In a skillet, cook bacon until crisp. Remove and set aside.
Pour 2 - 4 Tablespoons of reserved bacon drippings over bread crumbs and set aside.

Saute onion and chopped pepper in the remaining 2T of bacon drippings until tender. Stir in corn and diced cooked bacon. Spoon into a baking dish. Sprinkle with crumbs.

Bake 350 degrees for 20-25 min until bubbly.
Makes 6-8 servings

CORN CASSEROLE

2 cans corn
1 c. shredded Cheddar cheese
1 c. sour cream
1 can cream of celery soup
1/2 c. chopped onion
Pour corn in casserole dish. Mix all other ingredients together and pour over corn.

TOPPING FOR CASSEROLE:

1 stack/ sleeve Ritz or saltine crackers, crumbled and 1 stick butter
Melt butter and mix with cracker crumbs. Put on top of casserole and bake 30-45 minutes at 325 degrees.
