Potatoes Romanoff

1 lb. cooked ham, diced
2 cups water
3/4 cup milk
1/2 cup sliced fresh mushrooms
1- 10.75 oz can cream of mushroom soup
1- 4.7 oz box Au Gratin Potatoes
3 green onions, sliced

Put the ham into a cast iron skillet and add water, milk, mushrooms, mushroom soup and packets containing au gratin potatoes and sauce. Bring mixture to a boil, stirring frequently. Reduce heat, cover and simmer about 25 minutes till potatoes are tender. Garnish with sliced green onions. Serve hot.

It was actually listed as to use ground beef, but I had ham I wanted to use and we love potato and ham dishes so notched it up a bit and it turned out really well! Hope you enjoy it!

Thanks, Cat lover! I like the idea of using ham, as I, too, enjoy such dishes, but the ground beef sounds yummy as well!

Looks like this will be a good recipe to try. I sure do miss the postcard exchange. Don't look like it's very popular like it use to be when I first joined :-(

It was tried again a long time ago, but couldn't get enough members to keep it going.
