Quick Stove-top Rice Casserole

Quick Stove-top Rice Casserole

1. Boil 2 cups of rice in 4 cups of water to which is added 2 Tbsp. beef bouillion powder, 1 Tbsp dried parsley, and 1/4 cup chopped celery leaves.

2. In another pot, with 4 Tbsp oil, fry up a pound of ground meat. I used frozen venison which is why the oil was doubled from the usual 2 Tbsp. I also covered the pot while it fried and just scrubbed off the cooked meat from the frozen mass with a wooden spoon as it cooked. Using a food processor, grind the cooked meat and add some salt and pepper.

3. In the meat pot, de-glaze the browned bits at the bottom of the pot with a pint of crushed tomatoes, add in 1/4 cup of ketchup for flavor. Then add the cooked rice mixture. Stir well. Add the beef back in. Stir again.

4. Cube 4 oz of cheddar or other hard cheese into 1/2 inch cubes and stir into pot. Stir in 1/8 cup of dried basil or italian seasoning. Serve immediately with sour cream on top.
