from The Best Casserole Cookbook Ever, Beatrice Ojakangas:

350F, shallow 4 cup casserole, greased.

1. Cut slits into and then rub olive oil on and then bake 1 large eggplant and 2 large garlics in aluminum foil until withered and soft, 1 hour.
2. In your food processor, put 2 TBSP balsamic vinegar, 1/4 cup basil (I used dried), 3 TBSP yogurt, 1/2 tsp salt, 1/4 tsp pepper (I used black and smoked sweet paprika both).
3. Add the peeled soft baked eggplant and garlic without the paper shells. Give it a whir until almost but not quite smooth.
4. Layer eggplant then 1/3 cup parmesan twice. Bake 20 minutes, bubbly.
5. Serve on top of toasted bread.

Would be good to add a squeeze of lemon or two either to the eggplant mixture or to the bread/butter combo. Watch too, the slather is hotter in temperature than one expects!
