Ricotta Pie

Ricotta Pie

2 sheets of frozen puff pastry cut in half length ways.
1 egg
100 grams of ricotta
50grams crumbled feta
1/2 teaspoon of mixed herbs, or to taste.
120-ish grams steamed, cooled and well drained/squeezed spinach, and chop roughly. (100g when cooked)

I mixed the egg with ricotta then add feta and herbs.
Mix in spinach.
Spread the mix in a square on half the pastry sheet and fold over and seal. So it ends up being a square pillow. You'll end up with just enough for 4 square pillows.
Brush over with milk and sprinkle sesame seeds on top (optional)
Bake at 200*C for 20-25 mins or until browned nicely, serve with salad.

So technically not a pie but you could do it that way if you wish or keep cutting the pastry to make bite sized portions.

OR I could make a ricotta and pumpkin ones, I've eaten one of those and the sweetness of the pumpkin was gorgeous!
