Creamed Chicken over Biscuits

CREAMED CHICKEN OVER BISCUITS

1 boiler/fryer chicken, cooked & deboned
1 cup frozen peas
1 cup canned carrots
1 can chicken broth
1 can cream of chicken soup
1 can cream of celery soup
Biscuits

Remove & discard the skin. Break or cut into small chunks. Or you can use left over chicken or cubed precooked chicken or turkey.
Put all ingredients in a big stock pot. Heat thoroughly, stirring often. If it is too thick, add a little water or if too thin, make a thickening with flour & water & stir in. Optional: add a couple drops of yellow food coloring if desired. Serve over biscuits or toast.
This can be frozen for later use or use in pot pies. If using biscuit dough for pot pies, roll it thin as the biscuit dough will rise.

Location: I live in the foothills of Maine and near a major river. The area is quiet but we can be in a large city that has everything that you would want to visit. WE're two hours from Old Orchard Beach and it is so beautiful

This is a very good and very easy recipe to make. My Dh loves it and has asked me to make it again soon.It is not expensive to make and it goes a long way.
