Mexican Rice-a-Roni

    Mexican Rice a Roni


    • 1 lb. ground beef or turkey
    • 1 box beef flavored Rice and Vermicelli mix
    • 1 can Rotel tomatoes and green chilies
    • 1 pkg taco seasoning
    • 2 cups shredded cheese (your choice)
    • Directions]Brown ground beef, drain and set aside. Brown the rice and vermicelli according to directions on the box.
    • Mix all ingredients except cheese. Add 1 3/4 cups hot water. Bring to a boil, cover, and simmer until rice is tender and liquid is absorbed. Add the cheese and stir to mix. Cover and let sit until cheese is melted.
    Serve in flour tortillas, or as a dip with chips or just as a main course. Be creative with your add-ins too. Corn, green beans, mushrooms, you get the idea. I have also used canned chicken, tuna, or leftover meat from another meal. We love onions, peppers and olives added in.
  • going to send this to my daughter.. they like Mexican foods like I do, and lots of times lately she been trying new dishes on me, so maybe she will fix this for me too. LOl
