White Fish Meal In One

1/2 lb frozen whitefish fillets (could use fish of your choice;I've used pollack also)
3 tbsp margarine
1 can reduced fat cream of mushroom soup
1 1/4 cup skim milk
1/4 cup finely chopped onion
1/4 tsp salt
1/2 tsp pepper
1 1/2 cups cooked brown rice (I like to mix in some wild rice)
1 10 oz pkg frozen peas, thawed
1/2 cup grated low fat cheddar cheese
dash of paprika

Saute the fish in margarine and cut into cubs. Combine soup, milk, onion, salt and pepper in a saucepan and bring to a boil stirring occasionally. Add the rice, fish and peas. Put into a casserole and top with cheese and sprinkle with paprika. Bake, covered for about 20 minutes at 375 degrees. 4 servings
