Nacho Mac & Cheese
1 pkg. (24 oz.) family-size creamy cheese sauce & shell pasta dinner, such as Velveeta's
1 can (5 oz.) fat-free evaporated milk
1 1/2 lbs. lean ground beef
1 tsp. chili powder
1/2 tsp. ground cumin
1 jar (16 oz.) mild salsa, 1 1/2 cups
1/2 cup crushed tortilla chips
1 Tablespoons chopped fresh cilantro
Preheat oven to 350. Prepare pasta with sauce according to package directions; stir in evaporated milk.
Heat large nonstick skillet over medium-high heat. Crumble in beef; add chili powder and cumin. Cook, stirring occasionally, until browned. Stir in salsa; bring to simmer.
Transfer beef mixture to a 2 qt. baking dish; top with reserved pasta mixture. Sprinkle with tortilla chips. Bake until heated through, 20 min. Sprinkle with cilantro.
Serves 6
