BAKED ZITI

1 lb whole milk or 1% cottage cheese
2 large eggs, lightly beaten
3 oz. grated Parm (about 1 1/2 c.)
Table salt
1 lb ziti or other short tubular pasta
2 Tb extra virgin olive oil
5 med garlic cloves, minced or put thru press (about 5 tsp.)
1 28 oz can tomato sauce
1 14.5 oz can diced tomatoes
1 tsp dried oregano
1/2 c plus 2 Tb. chpped fresh basil leaves
1 tsp sugar
Ground black pepper
3/4 tsp cornstarch
1 c heavy cream
8 oz low fat mozarrel cheese cut into 1/4 inch pieces about 1 1/2 cups (don't use shredded)

Adjust oven rack to middle position and preheat to 350. Whisk cottage cheese, eggs, and one cup Parm together in med. bowl; set aside. Bring 4 qt water to boil in large Dutch oven over high heat. Stir in 1 Tb. salt and pasta; cook, stirring occasionally, until pasta begins to soften but is not cooked thru (5 - 7 min.) Drain pasta and leave in colander. Don't wash Dutch oven. Heat oil and garlic in 12 inch skillet over med. heat until garlic is fragrant but not brown (about 2 min.) Stir in tomato sauce, diced tomatoes, and oregano. Simmer until thickened, about 10 min. Off heat, stir in 1/2 c. basil and sugar, then season with salt and pepper. Stir cornstarch into heavy cream and transfer mixture to empty Dutch oven set over med. heat. Bring to simmer and cook until thickened, 3-4 min. Remove pot from heat and add cottage cheese mixute, 1 c. tomato sauce, and 3/4 c. cubed mozzarella and stir to combine. Add pasta and stir to coat thoroughly with sauce. Trasfer pasta mixture to 13 - 9 baking dish and spread remaining tomato sauce over pasta. Sprinkle remaining 3/4 c. mozzarella and 1/2 c. Parm evenly over top. Cover tighly with foil and bake for 30 minutes. Remove foil and continue to cook until cheese is bubbling and beginning to brown, about 30 minutes longer. Cool for 20 minutes. Sprinkle with remaining 2 Tb. basil and serve.
