Stuffed Green Peppers

as posted by futureteacher in WFD 08/06:

4 medium green peppers
1 small chopped onion
3-4 cloves garlic, minced
1 lb ground beef
salt and pepper to taste
1 Tbsp Worcestershire sauce
28 oz jar diced tomatoes--do not drain
1 cup rice
12 oz shredded cheddar cheese

Slice off tops of peppers and discard. Slice peppers in half lengthwise and remove seeds. Dip peppers in boiling water for about 10-15 seconds. Place peppers in greased 9x13 baking dish with inside facing up. Lightly salt.
Brown hamburger with onion and garlic. Drain. Add tomatoes, rice, Worcestershire and salt and pepper to ground beef. Simmer for about 20-30 minutes or until rice is tender and has absorbed the liquid from the tomatoes.
Spoon ground beef mixture into the pepper halves. Top with cheese. Bake uncovered for about 25-35 minutes, until cheese is completely melted.
