Chicken and Cheesy Cauliflower Spinach

    Chicken and Cheesy Cauliflower Spinach


    1 whole chicken
    1 whole head of cauliflower
    1/2 (10-oz) package chopped spinach
    1/2 pound Velvetta cheese, chopped
    1 tablespoon garlic--diced (I premake roasted garlic for myself)
    sale and pepper to taste

    Bake chicken in oven on a temperature of 350 degrees until it is golden brown after you have seasoned it like you want. When it is done, take it out of the oven and out of the pan. If there isn't enough pan drippings to cook the veggetables, add water. Cut and wash the cauliflower into small pieces. Put the cauliflower and spinach into the water along with the garlic. Boil until very tender and soft. Drain. Using a potato masher, mash the veggies. Add the chopped Velvetta. Stir until the cheese is melted. Serve. The juices from the chicken will add flavor to the veggies.
