Thumbs up Pork chop and Scalloped Potatoe Casserole

4 pork chops
1 can cream of celery soup (1/2 fat)
3/4 cup milk
1 onion, diced or sliced
3 cups sliced potatoes (about 1/4 inch thick)
salt and pepper

Brown pork chops in skillet on both sides. Remove pork chops and drain the fat from the skillet. Add the soup and milk to the same skillet and cook until heated through. Remove from heat.
In a baking dish, arrange half the potatoes and onions. Sprinkle with salt and pepper and arrange the last half of the potatoes and onions and sprinkle with salt and pepper. Place the pork chops on top of the onions and potatoes. Pour the soup mixture evenly over the entire baking dish. Sprinkle with additional salt and pepper, if desired. COver and bake at 350o for 1 1/4 hours. Remove cover and bake about 30 minutes more until pork chops and potatoes are tender.
Makes 4 servings

I didn't change anything at all. It was quick & easy to make, but I should have cooked it just a little bit longer than I did... some of the potatoes weren't quite done. I liked it & I'd make it again.
