    Mississippi Mud

    1 cup butter
    2 cups sugar
    4 eggs
    1 tsp vanilla
    1 1/2 cups flour
    2 Tbls cocoa
    1 1/2 cup nuts
    1 4 oz can coconut or 1/2 cup
    1 7 oz jar marshmallow creme


    1 box powdered sugar
    1 cup melted butter
    1/2 can of evaporated milk
    1/2 cup cocoa
    1 tsp vanilla

    In large bowl mix butter and sugar until
    fluffy, add eggs one at a time beating
    well after each addition. Add vanilla,
    flour and cocoa to mixture blend well.
    Fold in nuts and coconut. Pour into
    9 x 13 greased pan. Bake at 350 for
    35 to 40 minutes. Spread marshmallow
    creme on warm cake; let cool. Make
    icing, spread over cooled marshmallow

    Serves hungry people!

    Here's the recipe...from Southern Living.. it's
    the one I've used for years... I can't improve
    on this...

    1 cup butter
    1/2 cup cocoa
    2 cups sugar
    4 large eggs lightly beaten
    1 1/2 cups all purpose flour
    dash salt
    1 teaspoon vanilla extract
    1 1/2 cups chopped pecans
    4 cups miniature marshmallows
    chocolate frosting

    Combine butter and cocoa in a medium
    saucepan. Cook over medium heat until
    butter is melts. Remove from heat;
    transfer to a large mixing bowl. Add
    sugar and eggs beat at medium speed
    with electric mixer until blended. Add
    flour, salt and vanilla beat until blended.
    Stir in pecans. Spoon batter into a
    lightly greased 13 x 9 inch pan.

    Bake in preheated 350 degrees for 35
    minutes. Remove from oven and sprinkle
    with marshmallows over hot cake.
    Immediately spread frosting over
    marshmallows on cake. Cool in pan on
    wire rack. Cut into squares to serve.
    Chill before slicing for neater squares.
    Yields 15 servings.

    Chocolate Frosting
    1 (16 ounce) package powdered sugar sifted
    1/2 cup milk
    1/3 cup cocoa
    1/4 cup butter softened

    Combine all ingredients in a large bowl
    beat at medium speed until smooth
    adding 1 more tablespoon of milk if
    frosting is too stiff. Yields 2 cups.

    You can make half the recipe in an 8 x 8 pan

    this is the variation I use...have since I was 10.

    2 cups sugar
    2 cups flour
    1 cup water
    2 eggs
    1/2 lb butter
    1/2 cup buttermilk
    4 tbsp cocoa
    1 tsp vanilla

    Melt butter, add water and bring to a boil. Add cocoa. Pour over dry ingredients and mix. Dissolve 1 tsp of this in buttermilk.Let standwhile beating eggs. Add buttermilk mixture, mix, add eggs,mix, add vanilla, mix Bake in 11 x 16 pan at 350 oven for 30 min. Frost


    2 cup icing sugar
    4 tbsp cocoa
    1/4 lb margarine
    1/3 cup milk

    Melt margarine, add milk and bring to a boil. Add the cocoa. Pour mixture over sifted icing sugar. Beat and pour over cake
