Banana Cake

  • Banana Cake
    2 1/2 cups flour
    1 teaspoon salt
    3/4 teaspoon baking powder
    3/4 teaspoon soda
    2/3 cup shortening
    1 2/3 cups sugar
    2 eggs
    1 1/4 cups mashed ripe bananas (2 to 3)
    2/3 cup buttermilk
    2/3 cup chopped nuts
    Preheat oven to 350 degrees. Grease and flour 2 (9") pans. Combine flour, salt baking powder and soda, set aside. Beat together shortening and sugar until fluffy. Add eggs, one at a time, beating well after each addition. Blend in bananas. Add flour alternately with buttermilk. Stir in walnuts. Pour into pans. Bake for 30 to 35 minutes or until done. Cool in pans on wire racks 10 minutes, then loosen and remove from pans, cool completely. Fill and frost with frosting.

    Frosting:Combine 1/3 cup plus 2 tablespoons flour and a dash of salt in 2 qt saucepan. Gradually stir in 1 cup milk until well lended. Cook over medium heat until thickened, stirring constantly. Cool. Beat together 1/2 cup shortening and 1/2 cup softened margarine in large bowl until creamy. Add 1 3/4 cups granulated sugar; beat until light and fluffy. Blend in 1 teaspoon vanilla. Add cooled flour mixture; beat until smooth.
