Banana Pound Cake


Banana Pound Cake

1 (2 layer) yellow cake mix
4 eggs (room temperature)
1/3 c. veg. oil
1/2 c. water
1 1/3 c. mashed bananas (about 4 med.)
1 small box instant vanilla pudding
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla extract

Combine all ingredients in a large mixing
bowl. Mix until blended, then beat at
medium speed for 4 minutes. Turn batter
into greased and lightly floured 10 inch
tube pan. Bake at 350 for 1 hour or until
done. If desired, dust with confectioner's
sugar before serving.

Sour Cream Pound Cake
Serves 6-8

1 cup/8oz shortening [crisco]
3 cups/1-1/2lb sugar
6 eggs
3 cups/12oz all purpose flour
1/2 teaspoon salt
1/4 teaspoon soda
1 cup/8fl oz sour cream
1 teaspoon vanilla

Cream shortening and sugar together. Add
slightly beaten whole eggs one at a time,
beat well after each egg. Sift dry ingredients
together and add alternately with sour
cream and vanilla. The more you beat the
better the cake is. Bake in tube pan for 1
and 1/2 hours at 150-160C/300-325F.

Chocolate Pound Cake with Chocolate-Marshmallow Frosting

1 cup butter, softened
1/2 cup vegetable shortening
3 cups granulated sugar
5 large eggs
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsweetened cocoa powder
1 cup milk
1 teaspoon vanilla extract

Chocolate-Marshmallow Frosting:

2 cups granulated sugar
1 (5-ounce) can evaporated milk
10 large marshmallows
1/2 cup butter
1 (6-ounce) bag semisweet chocolate chips
1 teaspoon vanilla extract

Preheat the oven to 325-degrees. Grease and flour a 10-inch tube or Bundt pan, tapping out any excess flour. Set aside. Cream the butter and Crisco together in a large mixing bowl with an electric mixer until light and fluffy. Add the sugar and continue beating until well blended. Add the eggs, one at a time, beating after each addition until well blended. Into another bowl, sift together the flour, baking powder, salt and cocoa and add alternately with the milk to the batter, beating well. Add the vanilla and beat until well blended. Pour the batter into the prepared pan and "spank" the bottom of the pan to distribute the batter evenly and eliminate any air bubbles. Bake 1 hour and 10 minutes or until a cake tester inserted in the center comes out clean. Let cake cool completely in the pan before turning out onto a cake plate. To prepare the Frosting: In a large, heavy saucepan, combine the sugar, evaporated milk and marshmallows. Bring to a boil over moderate heat and cook for 6 minutes, stirring. Remove the pan from the heat, add the butter, chocolate chips and vanilla and beat with a wooden spoon until the frosting is thick and smooth, about 10 minutes. With a rubber spatula, spread the frosting liberally and evenly over the top and sides of the cake. Let cool completely and keep covered until ready to serve.

"Real" Pound Cake

Oven - 350 deg
1 pound flour - sifted
1 pound sugar
1 pound butter
1 dozen eggs - separated
1 tsp salt
3 Tbsp vanilla (can substitute one Tbsp with almond extract or lemon or orange extract if desired)

Cream butter until light and fluffy. Start adding the sugar slowly, about 1/4 cup at a time, continuing to cream between additions. When all incorporated, add eggs, one at a time. Then, continuing to beat, add the flour slowly, about 1/4 cup at a time. Add the salt. Add the vanilla (and/or other extracts). One last beating, and you are ready to cook it!

Pour batter into a buttered, floured tube pan, and bake for about 45 minutes or until a toothpick comes out clean.

Cool about 30 min, then slide a spatula around the outer sides and around the tube, separate the tube from the outer pan and invert cake onto a wire rack to remove the tube. Allow to cool completely before trying to cut. (If it's a one-piece tube pan, you just use the spatula as described, and invert the cake out onto a wire rack to cool.)

You can use 2 loaf pans if you want to.

7-Up Pound Cake

3 sticks butter
3 cups Flour
3 cups Sugar
5 eggs
1 cup 7Up at room temperature
2 teaspoons lemon extract

Preheat oven to 325 degrees F. Grease and flour bundt pan. Cream butter and sugar until creamy. Add eggs one at a time until blended. Alternately add flour with the 7Up, ending with flour. Add the lemon extract and mix thoroughly. Pour batter into prepared pan. Bake for approximately 1 hour and 15 minutes, or until toothpick inserted in center comes out clean. Remove from oven and cool in the pan for 20 minutes. Remove from pan and cool thoroughly. I guess the only way you can save calories in this is to use Diet 7-up!LOL

(if you dont have 7up you can use Sprite or one similar to that.)
