Grandma S's Salad Dressing Cake

2 cups flour
1 cup sugar
2 t baking soda
4 T baking cocoa
1 cup salad dressing (miracle whip) or mayo
1 cup water
Preheat oven 375º. Mix all ingredients in
medium bowl, beating with an electric
beater until smooth. Pour into a
greased and floured cake pan. Bake
40-50 minutes or until inserted toothpick
comes out clean. For cupcakes bake
for 20-25 minutes.
I use salad dressing, especially miracle
whip, because of the zing!!! I don't
like mayo. I usually make cupcakes from
this recipe, because that's what my
grandma did the majority of the time.
You can flour the pan with baking cocoa.
If I decide to frost I usually use my mom's
frosting recipe, which can also be used
on a wacky or depression cake. I also eat
it without frosting or can be eaten with
ice cream or cool whip. Whatever mood I'm in.
Last night, I used a can of choc pre-made
store bought frosting.
Mom's frosting

3 T flour
1 C sugar
1 C butter
1 C milk
1 t vanilla
Cook flour and milk until very thick, almost a
dough ball. Let cool. Cream butter, sugar
and vanilla, until light and fluffy. Add to first
mixture and beat well. It should have the
texture of whipped cream. Spread on cooled
cake.
PS - You can lick the bowl and beaters
with this cake no raw eggs!!!!
But don't tell the kids!!! Keep it all to
yourself.
