Italian Creme Cake

Several years ago Better Homes and Gardens had a picture of an Italian Creme Cake on their cover. It was absolutely delicious. The recipe was based on a cake mix, and you added coconut, nuts, etc. I have years and years worth of the magazine, but not that issue. It doesn't come up in their search engine online either.

Anybody have that recipe or one like it that starts from a mix?

I found this doing an advanced google search. It says it's from a 1991 better homes and gardens mag., but it doesnt use cake mix. I'm sure you could substitute it though... Hope it helps! Let me know.

Italian Creme Cake

1 butter pecan cake mix1/2 c. pecans1/2 c. sour cream
Prepare cake according to directions on box. Mix in sour cream and pecans. Bake according to directions on cake mix.

ICING:

1 (8 oz.) cream cheese (room- temperature)1 box powdered sugar1 stick butter

This one is so good.

I've never had Italian Creme Cake. Sounds rich & yummy!!

Darla253 - your recipe sounds good! Can I ask where you live in Texas? Even though I am now a resident of Cajun Country, I was raised in Houston.

Hi, I live between Ft. Worth and Waco. It's called Alvarado. The sticks. I lived in Galveston a long time ago and use to go to Houston all the time. Just loved it there.

When my DD was born, we lived in Algoa (between Santa Fe & Alvin) and I worked in downtown Houston!

I absolutely LOVE living in Cajun Country but there are times that I really miss Houston and Texas in general!

But I DON"T miss the traffic!!!!!

Thanks for the tips! The cake mix I used was probably yellow or white cake, but these two recipes sound very similar to what I made. Don't know if the recipe is from 1991 (I've probably been subscribing that long - so it could be!).

Hey Darla253, I live between FW and Dallas, not too far from Alvarado (not too close either!).

Cake Mix

Hi Dawny,
I used the white cake mix when I made it. I have one sister in law whose parents owned bakeries for years and she helped me, more or less supervised and it turned out great. I can live on Italian Cream Cake! There's nothing better.

When you say Cajun Country are you meaning Louisiana?

The last time I was in Houston was when Hurricane Gilbert was fixing to hit Galveston and they forced everyone to leave. Years ago. So we ended up there in a hotel. We use to go to Papacita's for dinner a lot. I do miss that. But yes, gotta agree with you about the weather. Did you hear about the huge pile up the other day on the highway in Houston?

Italian Cream Cake

HI there:

I saved this recipe from another club and have left the comments written by the original contributor. I would imagine that you could use a bought mix and then follow the directions from the appropriate point in the recipe. Kat.

Incredibly Delicious Italian Cream Cake
Makes 1 - 3 layer 9 inch round cake

This is an old recipe from my aunt. It is both famous and infamous in
our family. It is absolutely irresistible.

1 cup buttermilk
1 teaspoon baking soda
1/2 cup butter
1/2 cup shortening
2 cups white sugar
5 eggs
1 teaspoon vanilla extract
1 cup flaked coconut
1 teaspoon baking powder
2 cups all-purpose flour

8 ounces cream cheese
1/2 cup butter
1 teaspoon vanilla extract
4 cups confectioners' sugar
2 tablespoons light cream
1/2 cup chopped walnuts
1 cup flaked coconut

Preheat oven to 350 degrees F (175 degrees C). Grease three 9 inch
round cake pans. In a small bowl, dissolve the baking soda in the
buttermilk; set aside.
In a large bowl, cream together 1/2 cup butter, shortening and white
sugar until light and fluffy. Mix in the eggs, buttermilk mixture, 1
teaspoon vanilla, 1 cup coconut, baking powder and flour. Stir until
just combined. Pour batter into the prepared pans.
Bake in the preheated oven for 30 to 35 minutes, or until a toothpick
inserted into the center of the cake comes out clean. Allow to cool.
To Make Frosting: In a medium bowl, combine cream cheese, 1/2 cup
butter, 1 teaspoon vanilla and confectioners' sugar. Beat until light
and fluffy. Mix in a small amount of cream to attain the desired
consistency. Stir in chopped nuts and remaining flaked coconut.
Spread between layers and on top and sides of cooled cake.
