Chocolate Zucchini Cake
1/2 c. margarine
1/2 c. oil
1 3/4 c. sugar
2 eggs
1 tsp. vanilla
1/3 c. sour milk/buttermilk (I make mine by adding a tbsp. or so of vinegar to a scant 1/3 c. of milk)
2 1/2 c. all purpose flour
6-7 tbsp. baking cocoa
1/2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. baking soda
2 1/2 c. grated zucchini
1 (12 oz.) bag of chocolate chips (this is about quadruple the amount the original recipe called for!)
Mix as per any cake mixing directions, without adding the zucchini or chocolate chips yet. Once cake batter is mixed, fold in the grated zucchini, and mix just until combined (don't over mix). Pour into 13 x 9 in. pan (greased and floured?) and sprinkle the bag of chocolate chips on top (minus the bag). Bake at 350 degrees for about 40 minutes. Delicious!
