Strawberry Freezer Cake

  • Heavenly Strawberry Freezer Cake


    2 C fresh strawberries, divided
    1 (14 oz.) can sweetened condensed milk
    2 T of lemon juice
    2 C of frozen whipped topping, thawed and divided
    12 chocolate and vanilla cream sandwich cookies, crushed
    1 T of butter, melted

    Line a loaf pan with wax paper being sure to extend the paper over the edges far enough to use as handles.
    Place 2 C of the strawberries into a mixing bowl.
    Mash the strawberries well.
    Pour in the condensed milk and lemon juice and mix until well combined.
    Fold in the whipped topping until mixed in well.
    Spread the mixture evenly into the prepared loaf pan.
    Place the crushed sandwich cookies into a mixing bowl.
    Add the butter and stir until the cookies are covered well.
    Press the cookie mixture over the top of the strawberry mixture in the loaf pan.
    Cover and freeze 5 hours or until very firm.
    Using the wax paper handles pull the cake out of the loaf pan.
    Place a serving platter on top of the cake and turn the cake over.
    Carefully remove the wax paper from the cake.
    Makes 12 servings

    Preparation Time: approximately 20 minutes
    Freezer Time: approximately 5 hours
