Pina Colada Cupcakes

Pina Colada Cupcakes Makes 24

1 box pineapple cake mix
3 eggs
1/3 cup unsweetened applesauce 1- 8oz can crushed pineapple, drain juice but reserve it (should be close to 1/2 cup)
1 box coconut cream instant pudding mix
1/2 cup shredded coconut

Preheat oven to 350 degrees. Line 24 cups of mufin tins with paper liners. Pour pineapple juice from the can of crushed pineapple into a measuring cup; yo should have close to 1/2 cup. Top with water till it reaches 1 cup. In a bowl mix cake mix, water, eggs, crushed pineapple and applesauce till blended. Beat in coconut pudding mix and shredded coconut. Bake about 16 to 18 minutes or till tests done. Cool completely. Frost cupcakes with the following Pineapple Cream Cheese Frosting and top with shredded toasted coconut.

Pineapple Cream Cheese Frosting

1 - 8 oz pkg. pineapple flavored cream cheese, room temperature
5 tbsp softened butter
2 tsp vanilla extract
1 - 32 oz bag powdered sugar

In a bowl of a stand mixer beat together the cream cheese, butter and vanilla extract till creamy. Gradually add powdered sugar a little at a time till the frosting has reached your desired consistency. I used a decorator to pipe the icing onto the cupcakes.

The original recipe was from Real Mom's Kitchen, but of course I changed some of it to suit us! They turned out very well!
