I've just made these and they are so light and fluffy and sorta taste like a fluffy donut, it's a keeper for me.
Donut cupcakes
- 1/2 cup white sugar
- 1/4 cup margarine, melted
- 3/4 teaspoon ground nutmeg
- 1/2 cup milk
- 1/2 teaspoon baking powder
- 1 cup self raising flour
- Topping ~
- 1/4 cup margarine, melted
- 1/2 cup white sugar
- 1 teaspoon ground cinnamon
I mixed by hand,
Margarine, sugar and nutmeg.
Added the milk and mixed flour and baking powder until just combined.
Put in cupcake papers and muffin pan to cook for approx 20 mins in a 375*F oven or until cooked.
While cupcakes are cooking mix the topping cinnamon and sugar and melt butter (keep separate).
When cupcakes come out of the oven immediately brush with melted butter and top liberally with the sugar cinnamon mix ( 2-3 at a time)
For me this mix made 8 cupcakes.
