Chocolate fruit cake

Chocolate fruit cake my Chocolate Christmas cake.
200g each
dried apricots
chopped dates
150g dried apples
1/2 cup brandy/rum
250g chopped butter
1 1/2 cups packed brown sugar
200g dark chocolate broken
4 lightly beaten eggs
1 cup plain flour
1 teas baking powder
1 teas nutmeg
Grease and line cake pan
Combine all fruit in a large bowl.
Pour over brandy and cover, allow to stand 2-3 hours, overnight is better.
Combine soaked fruit butter and brown sugar in a large saucepan.
Cook for 10 mins stirrring over med to low heat until butter has melted.
Remove from heat and add chocolate, stir until choc has melted. Cool
Pre heat oven 150C
Add eggs one at a time to choc mix (I mix this cake in the pot that I melted the choc and butter in)
Fold in sifted flour baking powder and nutmeg
Spoon into prepared tin(s) and bake
1 tin 2 - 2 1/2 hours
2 for 1 1/2 - 2 hours
Also approx 50 min for muffin size ones.

I have never made this as one whole cake, it freezes well. If by chance you cook too long and it dries out a little more than you'd like,
serve with custard or cream like a pudding.
I usually make about 18 muffin sized ones and then use smaller loaf or round cake times till I run out of mix.
I'd always check with a toothpick or skewer to check cooking as your oven can vary.
DS1 has to be monitored other wise he would have them all eaten in no time LOL
