Chocolate Orange Cake

Chocolate Orange Cake


For the cake:
1 box devil's food cake mix
2 tbsp freshly grated orange peel
1 1/3 cup orange juice
1/2 cup vegetable oil
3 eggs

For the frosting:
1 1/2 containers Betty Crocker whipped vanilla frosting (I used 2 containers)
2 tbsp freshly grated orange peel
1/2 tsp orange extract
1/3 cup orange marmalade (I used sweet marmalade)

Garnishes (if desired, I didn't bother):
orange peel strips
corn syrup
sugar
Heat oven to 350 F for shiny metal pans (325 for dark or non-stick pans). Spray bottom and sides of 2 (8 or 9 inch) round cake pans with baking spray with flour.

In large bowl beat cake mix, 2 tbsp orange peel, orange juice, oil and eggs with electric mixer on low speed 30 seconds, scraping bowl frequently. Beat on medium speed 2 minutes, scraping bowl occasionally, until light and fluffy. Divide batter between pans.

Bake 8-in pans 32-36 minutes, 9-in pans 30-35 minutes, or until toothpick inserted in center comes out clean. Cool ten minutes on cooling rack. Remove from pans to cooling rack. Cool completely, about 1 hour.

In medium bowl, stir frosting, 2 tbsp orange peel adn the orange extract until blended. On serving plate, place one cake layer, rounded side down. Spread 1/2 cup frosting over cake layer; spread marmalade over frosting. Add other cake layer, rounded side up. Frost side and top of cake with remaining frosting. For garnish, cut strips of orange peel. Brush strips with corn syrup and sprinkle with sugar. Top cake with sugared orange peel. Store loosely covered at room temperature.
