Humble Pink Lemonade Layer Cake...

PINK LEMONADE LAYER CAKE...

1 white cake mix
3 TBSP. pink lemonade drink powder
3 eggs
1/3 cup vege oil
1 tsp. lemon zest

FROSTING:
1 pound powdered sugar
1 stick butter, softened
3 TBSP. frozen pink lemonade concentrate
1 tsp. vanilla
1 tsp. lemon zest

Preheat oven to 350 and Butter 2 8 inch round cake pans and line with wax paper. Mix cake mix and lemonade powder. Prepare cake batter according to box directions, using the eggs and oil. Stir in lemon zest and pour mix into pans evenly. Bake 30 minutes. Cool 10 minutes then invert on cooling rack and let cool completely. For frosting beat all ingredients well. Transfer 1 cake to cake platter and frost. Place second cake on top and frost. Garnish with lemon zest.

Wendy I have a question about this recipe. Is the pink lemonade drink powder the unsweetened or sweetened kind? If unsweetened, how many packets does that come to? I don't think there's 3 TBSP in one of those little unsweetened packets.

Well I winged it since I wasn't sure about a few things. Here are the adjustments that I made:

pink lemonade drink powder - I used the pre-sweetened kind

eggs & oil - it was a little confusing in the instructions. It said to make the cake as directed on the box and then says "with the eggs and oil". So I just followed the box directions. Coincidentally they had the same measurements and also called for 1 1/4 cups water. So I basically just added the drink mix to the box mix and then followed the directions.

lemon zest - my mistake here, I was using a 1/2 tsp measuring spoon, so only added half of what I should have

Frosting

1 pound powdered sugar - my bag was 2 lbs, so I measured it all out (rough, I didn't level the cups or anything) and came to approximately 3 1/4 cups, then I sifted that to get rid of lumps.

frozen pink lemonade concentrate - it didn't say thawed or not, so I measured it partially frozen and let it thaw before adding it

I also added ONE DROP of red food coloring. It turned the frosting just pink enough to look dainty

I took the lemon that I grated the zest from and cut it in half lengthwise, then I sliced a bunch of very thin to decorate the cake with.

The frosting tastes so good so I would imagine that the cake will too. I will post a pic when it's done

I give this recipe a thumb's up I'm attaching a couple of pictures of the finished cake, and after enjoying a piece I will say it's quite tasty. I wasn't able to finish the frosting though, it was too much. But that could be because it was a pretty big piece of cake LOL!

I also used the lemon to decorate the top of the cake with and also I used a few thin curls of fresh sliced lime to decorate the middle. Wish I had a new digital camera so I could post pics again!!!

Ur cake looks great and the color is amazing also. THANK U for the Blue Ribbon Award on this!!!

I will be entering this cake in the Arts & Crafts Show that we will b having here in town on the 9th, this coming Sat. and I am hoping 2 have me a new digital camera by then so I can take some pics. The categories will be Cakes, Candies, and Pies. I will make the Lemonade Cake for sure and am still undecided on what 2 enter 4 the other 2 categories but I will definately b entering all 3 categories!!! I just love 2 bake!!!!
