Floyd's Fresh Orange Cake
Cake Ingredients:
1-18.25 Oz. White Cake Mix (Cheapest Brand)
1 1/2 Cups Regular Flour
1 Tbsp. Baking Powder
4 Large Navel Oranges peeled and diced (2/3 for cake batter and 1/3 for icing)
1 12 Oz. can of frozen Orange Juice Concentrate + 2 Cups water
1/2 Cup canola Oil or Light Olive Oil
4 Tbsp. Fresh Orange Grist or 3 Tbsp. Dried Orange Grist

Now put all of the above ingredients (only 2/3 of the diced oranges; the other 1/3 goes into the icing) into a very large bowl and mix well. Try to leave the diced oranges in big chunks. Do not use a beater. Use a large spoon to mix the batter. When the batter is ready, pour into the prepared pan bake it 50-60 minutes in the oven. Check it with a toothpick to decide when it is done.

Icing Ingredients:
3 Tbsp. Fresh Orange Grist or 1 Tbsp. dried Orange Grist
1/2 of a 1 pound container of bought white icing (cheapest brand)
1/2 of a 12 ounce can of Frozen Orange Concentrate
1 Cup light Karo or any light corn syrup
1/2 Cup Sugar
Diced Oranges left over from above (the 1/3 left for the icing)

While the cake is baking, put all of the icing ingredients (except for the diced oranges) into a 2 quart pot and slowly bring to a boil. Boil for 15 minutes, stirring constantly, then remove from heat. Slowly add the diced oranges and stir them a bit. Let them sit while you prepare the cake.

Take a sharp serrated knife and cut criss-crossed cuts about half way into the cake. Make the cuts 1/2 to 3/4 inch apart. When you have finished this, dip the orange chunks out of the icing and put them evenly over the cake. Then pour the liquid part of the icing over the cake. Enjoy.
