Black Bottom Cupcakes
1-8oz. cream cheese
1 egg
1/3 c. sugar
1 1/2 c. flour
1 c. sugar
1/4 c. cocoa
1 t. soda
1 c. water
1/3 c. oil
1 T. vinegar
1 t. vanilla
Mix softened cream chees, egg and sugar. Stir in 6 oz.
choc. chips. Set aside. Sift together flour, sugar, cocoa,
soda. Add the water, oil, vinegar, and vanilla. Mix well.
Fill muffin cups alf full with choc. batter. Top each with
a heaping teaspoon of cream cheese mixture. Sprinkle with
sugar and nuts if desired. Bake at 350 for 30-35 min.
Makes about 1 dozen.
