Walnut-Spice Cake

  • This cake has a delicate, delicious flavor.

    2 cups flour
    2 tsp baking soda
    1/8 tsp EACH: cinnamon, nutmeg, pumpkin pie spice
    pinch of salt
    3 tbl butter, at room temperature
    3/4 cup sugar
    1/4 cup brown sugar
    2 eggs
    1 cup milk
    1/2 cup chopped walnuts
    6 to 8 perfect walnut halves (for garnish)

    Combine flour, baking soda and spices. Set aside.

    Cream together butter and sugars in mixing bowl. Add eggs, beating in one at a time. Alternately, add milk and flour mixture. When beaten well, stir in the chopped walnuts.

    Pour batter into prepared loaf pan. If you will not be icing the cake, top with the perfect walnut halves now, and bake at 350 for 45 minutes or until it passes the toothpick test.

    If you will be icing the cake, save the walnut halves to top the icing.
