Dutch Breakfast Cake
2 cups all purpose flour
1/4 cup brown sugar
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/3 tsp nutmeg
1/3 tsp ground ginger
1/3 tsp salt
1 cup plain fat free or regular yogurt or buttermilk
1 egg, beaten
1/3 cup honey
Preheat oven to 350 degrees. Combine all the dry ingredients in a large mixing bowl. In a medium sized bowl, combine liquid ingredients (egg, yogurt, honey) and mix thoroughly. Stir wet ingredients into dry until moistened. Pour batter into an greased loaf pan and bake for 50-60 minutes, or until toothpick inserted in the middle of the cake comes out clean. Remove from oven, remove from pan and let cool on rack. Serve with margarine spread and coffee. This recipe doubles nicely into two loaf pans. Don't skimp on the spices or it will be bland.
