Green Tomato Cake

  • 2 1/4 c. sugar
    1 c. melted shortening
    3 eggs
    2 tsp. vanilla
    3 c. flour
    1 tsp. salt
    1 tsp. baking powder
    1 tsp. cinnamon
    1/2 t. nutmeg
    1 c. pecans or walnuts
    1 c. raisins
    2 1/2 c. diced green tomatoes
    coconut---opt.
    Directions: Preheat oven to 350. In mixing bowl, beat sugar, shortening, eggs & vanilla 'til smooth & creamy. Sift together flour, salt, baking powder, cinnamon, & nutmeg; slowly beat into egg mixture.
    Blend well. Stir in pecans, raisins & tomatoes. Pour into greased 9x13 inch pan. Top w/ coconut. Bake 1 hr. or 'til toothpick in center comes out clean.
    Serves 12
    Just made for the 1st time for tonight's desert & my kids loved it.My husband & I liked it too.
