Pork-N-Bean Cake

  • 2 c. white sugar
    1 c. vegetable oil
    3 eggs
    1 (15 oz.) can pork-n-beans
    2 c. flour
    1 tsp. cinnamon
    1/2 tsp. baking powder
    1/2 tsp. baking soda
    1 c. raisins-opt.
    1 tsp. vanilla extract
    In large mixing bowl mix sugar, oil, eggs & beans 'til smooth. In separate bowl combine the dry ingredients then add to bean mixture, stirring 'til just combined. Stir in raisins & vanilla. Pour into the containers you're using to bake it in. If using the cans fill 2/3 full. Place pans or cans on a baking sheet & bake at 325 for about 45-50 min. Check with a toothpick. Cool completely & take out of cans. Grease & flour 5 (16 oz. ) cans to bake the cake in or you can use 2 (8X4 inch) loaf pans.

    My kids & husband couldn't even taste the pork-n-beans & they liked it. Cover it when you it's done because the pork-n-beans do get hard if sitting out.
