Angel Food Cake

as posted by cat lover in WFD 03/06:

ANGEL FOOD CAKE

1 3/4 cups egg whites, about 12-14 large eggs
1 1/4 cups cake flour, sifted before measuring
1 3/4 cups granulated sugar, divided
1/2 tsp salt
1 1/2 tsp cream of tartar
1 tsp vanilla extract
1/4 tsp almond extract

Sift flour with 3/4 cup of the sugar 4 times and set aside. In a heavy duty stand mixer or in a large grease free bowl with an electric hand held mixer beat egg whites with the salt and cream of tartar till soft peaks form. Gradually beat in remaining 1 cup sugar, about 1/4 cup at a time and beat well after each addition of sugar. Continue berating till stiff peaks form when beaters are liftrd. With a rubbewr spatula gently fold flavorings into the egg whites. Sift about 1/4 of the flour mixture over the egg whites and fold in gently using about 15 strokes. Repeat till all flour mixture is folded into the egg whites ending with about 10 more strokes to blend flour in well. Heat oven to 375 degrees F and position rack to lower third of oven. Gently spoon batter into an ungreased 10 inch round tube pan. Cut through batter with a knife to cut down on excess air bubbles. Smooth top and spread so batter is touching edge of pan. Bake on lower oven rack 35 - 40 minutes or till cake springs back when lightly touched with fingertip. Invert pan to cool completely about 2 hours. Using a knife slide around cake to gently loosed sides and middle tube of pan. Grasping the center tube gently lift cake out of pan. Carefully remove from tube section. Brush crumbs from cake and frost with a fluffy white frosting or garnish with whole strawberries and fill the center with sliced strawberries. Good sprinkled with a little coconut across top too.

Happy face Barszy, thanks for this recipe

Thanks, for reposting this recipe here. I am going to try it. As I have some diabetics in my extended family and one of my sister's is too. Also we like angel food cake. I have made it from a boxed mix before, but I am looking forward to trying this recipe.
