Banana Cake with Caramel Frosting

Banana Cake with Caramel Frosting

Nonstick spray for cake pans
Flour for dusting cake pans
1 pkg. (18.25 oz) PLAIN yellow cake mix(don't use the one with pudding in it)
1/2 cup packed light brown sugar
1 tsp ground cinnamon
2 medium bananas, mashed (1 cup)
1 cup water
1/2 cup unsweetened applesauce
6 egg whites

Place rack in center od oven and preheat to 350 degrees. Lightly spary 2- 9" cake pans with nonstick spray and dust with flour. Put cake mix, brown sugar, and cinnamon in large mixing bowl. Add mashed bananas, water, applesauce, egg whites. Blend with telectric mixer on low for 1 minute. Scrape bowl sides and beat with mixer at medium speed 2 minutes more. Batter should be blended well and bananas pureed. Divide into 2 cake pans and place side by side in oven. Bake cakes till lightly browned and toothpick inserted in center tests clean, 30 to 32 minutes. Remove fro moven and place on racks to cool for 10 minutes and then invert onto racks to continue to cool.

Prepare your favorite caramel frosting recipe and sprinkle the top with chopped pecans.
