Pumpkin Pie Cake
 
This is my own creation. It was sooo good!! :)


Pumpkin Pie Cake

1 box yellow cake mix ( not pudding cake mix)
2 eggs
1 1/3 cups canned pumpkin pie filling.
raisins (optional)
3 Tablespoons pumpkin pie spice ( to your own taste--even optional)

Mix all in a bowl according to the times on the cake box. I baked this in a 9x13 pan but it could easily be cupcakes too!

I topped mine with Cool Whip, my DH's with vanilla icing and my kids liked it plain.

This sounds good, I would have to put chocolate chips in mine, I'm the only one that likes raisins around my house

mmm, got to try this, as I love Pumpkin, and I love this time of the yr due to having more pumpking. so I will be tryign this out.

Thanksgiving pumpkin cake
 
THANKSGIVING PUMPKIN CAKE
1 (16 oz.) can pumpkin
3 eggs
3/4 c. vegetable oil
1/2 c. water
2 3/4 c. flour
2 1/4 c. sugar
1 1/2 tsp. baking soda
1 1/4 tsp. salt
3/4 tsp. nutmeg
1/2 tsp. cloves
1 1/2 tsp. cinnamon
1/2 c. chopped nuts
1 c. raisins (optional) I have used chocolate chips



Beat together eggs, pumpkin, vegetable oil and water. Add dry ingredients. Mix well. Stir in chopped nuts. Bake in greased and floured tube pan for 1 hour or until done at 350 degrees.
