Rum Cake

  • This is my favorite recipe once the fall holidays roll around. Enjoy!


    1 pkg. yellow cake mix with pudding
    3 eggs
    1/2 cup cold water
    1/3 cup vegetable oil
    1/2 cup rum
    1 cup chopped pecans or walnuts

    Preheat oven to 325 degrees. In a mixing bowl combine cake mix, eggs, water, oil and rum. Prepare bundt pan by spraying with non-stick cooking spray and sprinkle chopped nuts on the bottom. Pour cake mix in pan and bake for 1 hour (or until toothpick comes out clean). Cool for 15 minutes then remove from pan and let it finish cooling. Glaze.

    1/4 lb. butter
    1/4 cup water
    1 cup sugar
    1/2 cup rum

    Melt butter, water and sugar in sauce pan and bring to a boil, stirring to avoid burning. Boil for 5 minutes, remove from heat, stir in rum. Glaze cooled cake using all of the glaze.
