Summer Cake
1 box yellow cake mix
4 eggs
3/4 cup oil
1-11 oz. can Mandarin oranges with juice
Put in large bowl and beat until well combined. Pour in a greased and floured ( I just spray with Pam) 9x13 pan. Bake at 350 for 30 to 35 minutes.
Frosting
1-20 oz can crushed pineapple-well drained-reserve juice
1 pkg. instant vanilla pudding
1-12 oz. Cool Whip
Stir together pineapple and pudding. Stir into Cool Whip. When cake is cool, pour 3/4 cup (I just use all the juice) pineapple juice over cake. Spread with the frosting and refigerate........YUMMY!! This is the ONLY cake that gets eaten entirely in our house.
