Banana Snack Cake

1 2/3 cup all-purpose flour
1 tsp baking soda
1 cup packed brown sugar
1/2 cup water
1/3 cup mashed ripe banana (about 1 small)
1/3 cup vegetable oil
1/2 tsp vanilla extract
Confectioners' sugar

In a large bowl,combine flour and bakind soda. In another bowl,whisk the brown sugar,water,banana,oil and vanilla. Stir into dry ingredients just until moistened. Transfer to a greased 8-inch square baking dish. Bake at 350*F for 30-35 minutes or until toothpick inserted near center comes out clean. Cool on wire rack. Dust with confectioners' sugar. Cut into squares. Makes 9 servings.
