OH Chocolate Zuchinni Cake

As posted by debknechtel in the June 2004 WHat's for Dinner? thread.

OH Chocolate Zuchinni Cake

3/4 cup butter
2 cups sugar

cream

3 eggs
2 tsp vanilla
2 tsp orange rind

Add

2 1/2 cups zuchinni grated
1/2 cup milk
2 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 cup cocoa
1 tsp cinnamon
1 tsp salt
2 1/2 cup flour

mix then add

place in 9 x 12 pan
Bake 350 oven
30 -35 minutes

Icing

1/2 lb cream cheese
1/4 lb butter
icing sugar
orange juice and rind

Combine
Spread on cooled cake

A good way to use leftover zuchinni, makes a very moist cake.

Just wanted to add that this was a sinfully wonderful breakfast cake with coffee! After being in the refrigerator, the frosting gets firm and it was just yummy. All my kids loved it too!
