This was one of the first cakes I made when I was newly married; 31 years ago and it is still our favorite!
1/2 cup butter
1 2/3 cups firmly packed brown sugar
8 slices pineapple
8 maraschino cherries
2 cups sifted all purpose flour
2 tsp. baking powder
1/2 tsp. salt
2 eggs
2/3 cup milk
1 tsp. vanilla
Melt 1/4 cup of the butter over low heat in a cast iron skillet. Cover butter with 2/3 cup of the brown sugar. Arrange pineapple slices on brown sugar. Place 1 cherry in the center of each pineapple. Sift together flour, baking powder, and salt into a bowl. Beat eggs in a small bowl. Beat in remaining cup of brown sugar till mixture is smooth and stiff. Beat in milk and vanilla. Melt remaining 1/4 cup butter and beat into eggs. Pour egg mixture into bowl with dry ingredients. Beat till smooth. Spoon batter over pineapple slices. Cover, place on low heat and bake 40 minutes. Let stand 2 minutes.
This is good cooked over a campfire also in a cast iron Dutch oven!
