Coffee Cup Scramble

2 eggs
2 Tbsp. milk
2 Tbsp. shredded cheddar cheese
Salt & Pepper to taste

Coat a 12 oz. coffee mug with cooking spray. Add eggs and milk. Beat until blended.
Microwave on high 45 seconds. Stir.
Microwave 30-45 seconds more or until eggs are almost set.
Top with cheese. Season with salt and pepper.
*I got this from Mr. Food. Perfect when it's just me I'm making eggs for. I don't have to dirty my stove.

This will be easy enough for my grandaughter to cook her own breakfast this monring! She is recovering from strep throat and loves to cook, but right now I don't want her handling food for others! Thanks for sharing!
