Breakfast Burrito

1 lb. sausage
1 small onion, diced
1 large potato, baked, peeled, & diced
6 eggs, beaten
6 flour tortillas, heated
6 oz. Cheddar cheese, shredded
Picante Sauce

Brown sausage & onions in skillet. Drain. Add diced potato & eggs scramble all together. Add cheese & stir. Place generous amount of cooked mixture into steamed tortilla. Serve with picante sauce.

Beat your eggs together with a small amount of milk. I use 1 egg per person and 1 extra. Melt margarine in pan or spray with cooking spray, and add eggs. In another pan fry your bacon in strips and drain. After the eggs are cooked, add a spoonful or two to each tortillas, some cheese and a strip or two of bacon. (Each person can make their own). Roll up the tortillas and eat!

These sound really good. I'll have to try these. I probably wouldn't be able to use the picante sauce as I can't eat spicy things. I like scrambled eggs with a little green pepper in them too.
