Raisin Bread

I cooked the raisins in the 2 cups of water in the microwave, drained the raisins and saved the water I used about 1 C of raisins, this makes 2 loaves. I mixed the sugar, 1/3 C water and yeast to let yeast bloom. Mix salt, shortening, molassases cinnamon and 4 cups of flour and water start mixing ( I use my Kitchenaid), add yeast, keep addding flour as needed. I also added 1/3 C of milled flax seed.

knead for 10 minutes....let rise in oiled bowl for 2-3 hrs. I then divide dough in 2, add half the raisins in each section as I knead, as well as cinnamon chips, about 1/4 C for each half. once kneaded through place loaves in buttered loaf pans and let rise again, until doubled. Bake at 350degrees 35-40 minutes.
