chuckle Sweet Coconut Bread Recipe

I am looking for a sweet coconut bread recipe. Either a quick bread or a yeast bread. If anyone has a recipe i would greatly appreciate getting it.

Sweet Coconut Bread
from: Woman Day's Crockery Cookbook Number 2, 1976

3 C. flour
1 T. baking powder
1/2 t. salt
1 C. sugar
1 C. flaked coconut
1 egg, beaten
1 C. milk
1 t. vanilla extract

Mix flour, baking powder, salt and sugar; add coconut and mix thoroughly. Combine liquid ingredients and sitr into dry ingredients. Mix well and press into 2 well greased and flour 1-pound cans or molds. (Batter will be stiff.) Set in cooker and cover with 2 or 3 paper towels. cover cooker and cook on high for 3 hours or until done. Let stand on cake rack for 10 minutes then turn our on rack 10 minutes then turn out on rack to cool.



6 Cups of White Grated Coconut
9 Cups Flour
9 Teaspoons of Baking Powder
2 Teaspoons Almond Essence
4 1/2 cups of Granulated Sugar
1/2 Teaspoon of Powered Cinnamon
3/4 - one cup of Evaporated Milk
1/2 lb Margarine
4 well-beaten eggs
1 Cup of coarsely cut raisins

Melt margarine, allow to become cold. Heavily grease loaf tins (using margarine or lard). Mix and sift dry ingredients, add sugar and fruit, blend evenly, add coconut, stir well. Make a well in the middle, whip eggs, add milk, essence and cooled melted margarine, stir and when all ingredients are well mixed pour into well of the coconut mixture and stir with a spoon.

Mixture must be stiff. Don't knead the mixture, or use your hands for mixing as a stiff bread will be the result. The mixing must be done entirely with a spoon and assisted with another spoon for the pouring of the mixture into the prepared loaf tins and bake in preheated oven at 150 degrees "C" for approximately 1 hour, or until skewer comes out clean when tested.

Shawn I think i will give the first one a try. Already printed it off so now i just need to get the ingredients together and give it a try. To hot today 99 so no turning the oven on today. Thanks again that didnt take long at all.
