Amish Banana Bread
This banana bread gets its sweetness from the bananas and a little bit of brown sugar.
Ingredients: 350*
1 c mashed bananas, I used 4 very ripe bananas
1/2 c packed light brown sugar
1/4 c applesauce
1 egg and 1 egg white, lightly beaten
1 t vanilla extract
1 3/4 c all purpose flour, or 1 c flour and 3/4 c wheat flour
1/2 t baking soda
1 t baking powder
1 t cinnamon
1/2 c old fashioned oatmeal
1/4 milk
Directions:
Stir together all the dry ingredients.
Into the mashed banana stir in the wet ingredients.
Add the dry ingredients to the wet ingredients 1/4 c at a time, stirring together well.
In lightly greased bread pan, pour the batter.
Bake in 350* oven for 45 minutes, test for doneness with a knife. Bake additional 5 minutes if needed until done.
**I use mini loaf pans, baking for 25 minutes.
