Green Tomato Bread
This is a great way to use remaining green tomatoes before frost. Freeze bread and have something special for any occasion.
¾ cup raisins
2/3 cup boiling water
2/3 cup shortening
2 2/3 cups sugar
4 eggs
2 cups ground green tomatoes
2 tsp. Baking soda
3 1/3 cups all purpose flour
½ tsp. Baking powder
1 tsp. Cloves
1 tsp. Cinnamon
2/3 cup chopped nuts
Preheat oven to 350 degrees. Soak raisins in boiling water. Cream shortening and sugar in a large mixer bowl. Add eggs, tomatoes, plum raisins and water, beat well. Mix remaining ingredients together in bowl. Add to mixture. Pour into well greased 5 by 9 inch loaf pan. Bake for 1 hour and 10 minutes or until toothpick inserted in center comes out clean. Yield: 1 loaf
