Post Zucchini-Carrot Bread

This is delicious! I made it this weekend and shared a loaf with my neighbor whose wife is out of town.

3T AP flour
2C sugar
1T ground cinnamon
1t salt
1t baking soda
1/4 t baking powder
3 eggs
1C vegetable oil
1t vanilla
1 C shredded zucchini
1 C shredded carrots
1 C chopped nuts

Preheat oven to 325 F. In lg bowl, combine flour, sugar, cinnamon,salt, baking soda, and baking powder. In sm bowl, whisk eggs, oil, and vanilla. Add to dry ingredients;mix well. Stir in zucchini and carrots and nuts. Pour batter into 2 well greased 9x5 loaf pans. Make 1 hour to 1 hr 15 min or until golden brown.

PS I had to add an extra egg and my zucchini had some water in it as it had been frozen. Otherwise, I found the batter too thick. Use your own judgement. Also, I did not add the nuts.

Calling all cooks--I have a delicious recipe for pineapple-zucchini bread that I got from my late sister-in-law.

3 eggs, lc.oil, 2c.sugar, 2tsps. vanilla, 3c.flour, 2tsps.baking soda, 1tsp.salt, 1/4 tsp.baking powder, 1 1/2 tsps.cinnamon, 3/4 tsp. nutmeg, 1c.chopped nuts, 1 can (20-oz.)crushed, drained pineapple, and 2c.shredded zucchini.
Beat eggs, oil, sugar, and vanilla in large bowl. Sift dry ingredients, and add to egg mixture. Add zucchini, pineapple, and nuts. Pour into greased loaf pans, and bake at 350 for 60-70 minutes. Makes 2 loaves. This is absolutely delicious. You'll love it.

Zucchini Loaf
2 eggs
1/2 cup oil
1 cup sugar
1 1/2 c. flour
1/2 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
1 cup grated zucchini
1/2 cup nuts
Cream together eggs and oil. Mix dry ingredients and add to cream mixture, add vanilla and zucchinni, nuts.

Bake 350 for 1 hour.
