Pumpkin Roll

This is a recipe my aunt passed along to me, and I love it. I used to not eat the bread because I didn't like pumpkin; it was the sweet cream cheese filling that I was after! Now, I love the pumpkin bread and eat it all toghter. It's delicious!

Mix #1
1 cup sugar
1 tsp baking soda
1 tsp cinnamon
3/4 cup flour
2/3 cup pumpkin pie filling

Mix #2
8 oz. cream cheese - softened
1/2 stick butter (NOT margarine!!!) - softened
1 cup powdered sugar
1/2 tsp vanilla

Pre-heat oven to 375 degrees F.

Mix the first mixture together well. Grease a cookie sheet, or put wax paper sprayed with Pam (very important - experience talking here ) into the cookie sheet (I use wax paper - less mess). Pour the mixture into the pan. Place in oven and bake for 15 minutes.

While it is baking, mix the second mixture together and make sure to get out any large lumps. Allowing the butter and cream cheese to soften beforehand will help with this.

Once the bread is done, sprinkle it with a moderate coating of powdered sugar (not too thick, not too thin, and not the powdered sugar measured out for the recipe) and lay a clean handtowel over it. VERY CAREFULLY, hold the towel AND the cookie sheet together at each end and flip the pan over. If you have used wax paper, carefully pull it off of the bread.

Now you will roll the bread up in the towel while it is still hot, so be careful. Unroll the bread and spread out the cream cheese filling on it and roll it back up...without the towel!

You can serve this warm, and it is very good that way, or you can place it in the fridge and serve it cold...which is also very good. You can also freeze this recipe, I havn't tried it, but I reckon it would be like those cakes you buy at the store? And it looks very nice (almost like snow) to sprinkle some more powdered sugar over it!

It sounds much harder than it really is! And I learned to put the towel over the powdered sugar covered bread which made it a little easier to flip the cookie sheet without any help and used a LOT LESS powdered sugar! (the original has you flip the bread onto a ps covered towel and then roll it up...) The whole thing takes about 30 to 45 minutes, mixing, baking and everything!
